As i have mentioned in a pervious post, i want to add an element of food to my blog.
I am a vegetarian who lives with a non-vegetarian, so i aim to offer some advice that i find helpful when it comes to meal times.

Yesterday evening i ate alone. My boyfriend Tom was out, so i didn't have to worry about compromising on dinner. For some reason i wasn't particularly that hungry yesterday, so when it came to dinner time i knew i wanted something fairly light and simple, but would also keep me full until i went to bed.

One of my all time favourite combinations is Avocado and Egg. Another combination that works brilliant is Egg and Asparagus. Yesterday i just happened to have all three ingredients in my fridge... so bring on the three way!

I cut up some soda bread and popped it under the grill until lightly toasted. Whilst my eggs were poaching, I sliced up half an avocado and layered it on my soda bread. I didn't feel the need to spread butter on my toast as avocado is very creamy anyway. After quickly steaming a few sticks of asparagus, popping on my poached eggs and adding a sprinkle of salt and pepper, i sat down and enjoyed my meal!

This dish is simple, quick, and works as any meal of the day!
